Some more Biscotti

I'm really into making biscotti right now, so consequently, you're going to hear about it (or rather, "read about it") So the other day my mom let me try 2 new recipes! Orange Biscotti, and banana nut biscotti. Well, I went to make the orange and realized that we had no orange extract or oranges or anything orangy. That's a problem when you're trying to make something orangy, isn't it? So I changed it into almond cranberry biscotti, then later after I'd gotten orange extract, glazed it with an orange glaze :) Mmm... who knew those flavors would work so amazingly together? Not me, apparently, but now it's one of my favorite combination's!!

Then I made the banana-nut, and simply topped it with some milk chocolate.

Today I tried peanut butter biscotti with mini chocolate chips and peanuts mixed in, topped with milk chocolate drizzle and peanut butter glaze. It's pretty good, but I think I scorched over-baked it just a wee bit as it is kind of dry, in fact it's almost like a desert! I HAVE been kind of fascinated with Egypt lately...
:P It tastes good though, and it will still make an excellent partner for hot chocolate or coffee later. Sorry, I don't have pictures of it yet...

Biscotti!

I'm not too experienced with biscotti, but for some reason the past few days I REALLY wanted to try it again (I'd only ever done it once before, and it turned out pretty crumbly) so last night I tried it again. I used a recipe called "Brownie Biscotti" and it turned out really well! I just changed some very little things, like, the recipe called for pecan pieces, but I thought almond bits would be better, so I did that. Then after they were done, I thought that there was something it needed, then I figured it out! Glaze! And since I've been in a real chocolate/raspberry mood recently, I made some raspberry glaze (I even made it purple) and drizzled it on and they turned out beautifully! ...At least I think so. Maybe I'm just the prideful baker here or something, though :) Anyway, then I took pictures of it and THEN let people have some :P

Blueberry Pie Recipe

This is a blueberry pie recipe that I got from (where else?) allrecipes.com, I made it for lunch at church a week or so ago and it disappeared rather quickly. I got the chance to taste a wee bit that was left in the pan (all the full size pieces were gone) but what I had was very yummy! I love fresh blueberry baked stuff!

Ingredients

  • 3/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 cups fresh blueberries
  • 1 recipe pastry for a 9 inch double crust pie
  • 1 tablespoon butter

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
  3. Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
  4. Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.  Enjoy!

I made soup!

But I tested a little too much a little too soon and as a result I have no idea what it tastes like... except that there's no lack of pepper. I could tell that :\ hehehe! So I just thought I'd show you! As busy a weekend as this is, somehow I ran out of things to do this evening even though I had seemingly "so many" things to do earlier... :)

Who's celebrating her 15th birthday today! Julianne has been a wonderful pen pal and friend to me so I wanted to wish her a very happy birthday in a special way! I happen to know that she likes haiku's and so even though I'm not nearly as talented writing them as she is, why not give it a try?
