These are a few of my favorite things!

Hello people of the world who happen to be reading my blog (small percentage though it may be),
the reason I rarely post is that I can never think of anything to post about so I started trying just posting about completely random things --see previous post-- but now I'm thinking that technically, it's my blog and it's purpose is for me to go on and on and on about whatever I want, and if you feel like reading it..YOU ARE SO AWESOME hahaha, so yeah! I thought today I'd just post some pictures of some of my most favoritest things because I thought it'd be fun.

That's PA for ya.

As you may have heard, Pennsylvania is filled with fields. And fields and fields and fields and... so on. There happens to be one right across from our house, and it happens to make for great pictures when the sun is shining so insanely brightly. I took these the other evening, it was SOOOOOO beautiful out!

A week in pictures: Monday :-)

So, I had this idea. I was kind of wondering what exactly it is that I do from day to day. So I thought I would make an effort to document this week and find out! I just thought it'd be fun.
So here's some pictures from today!

I found some water balloons a couple of days ago and was having fun with them today.

Then later I was bored so I started taking self portraits.. which is usually what it comes down to in the end, lol.




I did some other stuff today, too, I just didn't document everything :-) I'm not even sure that I'm done yet today but I felt like posting something sooooo POST!

Crazy!

That's what it's been around here! What shall I start with telling you about? Hmm..
Jamaica sounds like a good place to start. Or end, it's pretty nice for anything, but I'm going to use it for the beginning of my post :o) So, My Grandma's, brother, and I, got to go on a cruise to Jamaica! We had such a good time! And it was sort of a missions trip-like thing, so it was REALLY cool! We started out by flying to Miami, where we stayed the night and boarded the ship the next day. We then set sail for Jamiaca! When we got there, a couple of days later, we spent our first day on a beach excursion. It was so pretty! They do not lie, the water is BLUE! The day after that was our turn to do the missions part of the trip. We went to a special home for kids with disorders like Down Syndrom and things like that. I think that was my favorite part of the trip, those kids were amazing. So sweet and innocent, it's hard to really explain how cool it was.
(I'm sorry I don't have pictures to share... my computer tends to be... um... silly..)
A week and a half after we returned from that trip, My parents, brother, and I headed to Kentucky for a music festival that I'd been wanting to go to for a LONG time! It was such a blast! Every morning we went to Starbucks for breakfast and wifi :) then our parents would take Mikey and I to the festival, and they would spend the day doing something less, shall we say, exciting? Mikey and I got to see pretty much all of our favorite bands, there were some missing, but there were so many good ones there! we had an awesome time.

Moving on, just yesterday, I turned 16! I had my friends Emma and Lindsay over for a sleepover the night before and in the morning we made, in the words of Emma "Lemon Pancakes with Blueberry junk on top" :-) Then we headed out! We had to drop Lindsay off at home so that she could give a riding lesson, and Emma stuck with us for a while. We went to the drivers center and I took my permit test (My mom and Emma patiently waited first in line with me, then while I read every question 2-3 times) But I passed! So it's all good! Now I can drive my car, which I named Vincent :)
Then we went to lunch at Olive Garden!! Yumm! After that, I had a consultation about me hair, (I'm going to have it colored or something soon..) then we went to Starbucks! After that we had to take Emma home. :( So we went home too, because a while after that we'd be leaving again for my birthday dinner with the family :-)

So that's pretty much the big stuff that's been going on!! (There's no shortage..)

Strawberry Vanilla Mousse Parfaits

For a long time I wanted to make pretty parfaits. I make trifles all the time, but they're bigger. I wanted to make parfaits! So when we recently picked strawberries, it was perfect! So! First I made Strawberry Cinnamon Bread. Here's the recipe for that, which came from allrecipes.com (Woo!)


  • 2 cups fresh strawberries




  • 3 1/8 cups all-purpose flour




  • 2 cups white sugar




  • 1 tablespoon ground cinnamon




  • 1 teaspoon salt




  • 1 teaspoon baking soda




  • 1 1/4 cups vegetable oil




  • 4 eggs, beaten




  • 1 1/4 cups chopped pecans



  • Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5 inch loaf pans.
    2. Slice strawberries, and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
    3. Combine flour, sugar, cinnamon, salt and baking soda in large bowl: mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into pans.
    4. Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.
    Then I cut that into little cubes. (It was very easy to cut and made very nice little cubes that didn't crumble!) and I mixed up the Vanilla Mousse, which is actually just a small box of "Jello" vanilla pudding, about 3 tablespoons of "Maxwell House International cafe' French Vanilla drink mix powder" (Pictured), and about 2 cups of Cool Whip. So it's not exactly super official Mousse, but it's a little more than just pudding ;-)
    Then I cut up the strawberries into little chunks and layered away! It was fun!! Then while I let them chill in the fridge for a few minutes, I made little chocolate garnishes to put on top of them with a bit of Cool Whip! Here's how they looked when I finished them :D


     That chocolate splatter was supposed to be a star, but I like it better as a splatter.



    This is my customized Chelsea topper :-) (I had to make sure I got one somehow, haha) Notice the Carrot behind my name ;-)

    These were sooo fun, I hope you try it sometime!

    By the way: I never explained how I made the garnishes. All I did was melt some chocolate wafers in icing bags and then piped them onto wax paper, set them in the freezer for about 3 or 4 minutes, and they were ready to top with! Enjoy!

    Peanut Butter Cup Cookies

    There was a fellowship meal yesterday at church, so in preperation for that, on Saturday I got to make a recipe that I've wanted to make for forreeevvveeerrr. Reese's PB cup cookies! Which in case you didn't guess, are peanut butter cookies with chocolate chips and chunks of Reese's PB cups shoved in them :-) As soon as they were done the family was at 'em and I said "nooo, noo! They're for tomorrow" but alas, it did not work. Thankfully, there were plenty left. But I also made "Mocha Crackle Cookies" (while in fear that the others were done for) and they turned out pretty well, too.

    They were definitely a hit at church. Though, I was just glad to find that someone had brought Chocolate Mousse! Which was light and fluffy and AMAZING! I love, LoVe, LOVE, light and fluffy chocolatey substances (...most of the time..) :-D

    I feel like a blogger.

    First of all, you MAY have noticed my blog name is no longer "It's about Friends" ya see, I've always been one that likes change, and I was really getting sick of the other name. While I was thinking of carrot-like names for something, I randomly thought "that's the way the carrot crumbles" and I thought it was cute, so I changed my blog name to that... since my nickname is Carrot and all.

    And so now the title of this post MIGHT have made you think "Chelsea feels like a blogger? How is this?" Yes, I know. I have failed to post regularly, and make a pretty lousy excuse for a "blogger" buuuuut! I recently tried something that made me think "I could blog about this!" Dearest friends, I have never had that thought in. my. life. But I did, and now I feel like a blogger. Special moment? I think yes. In fact now that I've started rambling, I'm thinking of all sorts of things I could tell you about!
    The main one being (fear not!) Naked Fruit Juice. It's a BRAND, okay? In my opinion, a very poor choice of brand name, but it is what it is.
    Anyway, this stuff is awesome. (This is the flavor I had, too) Ya see, we were watching the Food Network program "Unwrapped" and they showed how this stuff is made. I was interested to find that it's pretty much just fruit. There's no sugar or syrups or nastiness. So I wanted to know how it tasted. Coincidentally, the next day we were at the grocery store, and guess what I spotted? That's right! Wait, a monkey? no. What I saw was this juice and my wonderful mother allowed me to get one. And I think I may now be a juiciholic. ---Let it be known, just because I'm also a juiciholic does NOT mean that I'm giving up coffee! I still hafta have that at least 5 times weekly ;-)---

    Well! I think I've gone on about a random subject for long enough now! Who knows, maybe now that I've felt like an official blogger, it'll stick. ...maybe. :)

    Yeah I know... it's been a while. I do apologize, again. :( Try to keep this quiet, but I may not be the best blogger in the world. SHOCKING! I know! ;)
    Anyway! A while ago I was taking some goofy pictures to send to someone to make them smile :)

    So in other news, I have six more books to read for school and I have to finish my ten page report, and do some other odsy-endsy things, and then soon enough! BAM! Graduation will be here! YES!! :-D

    Sunset Pictures from the car!

    Today we went to Longwood, and for some reason I didn't feel like taking pictures there. But on the way home was a different story. The sun was incredible (really bright and hard to drive with, I'm sure, but pretty all the same!) and see, I have this thing with looking at the sun. I really want to, but deep down, I know I'll end up blind. So I always go for the camera... it works better than my eyes when it comes to this. So here's the pictures I came up with.
