I'm not too experienced with biscotti, but for some reason the past few days I REALLY wanted to try it again (I'd only ever done it once before, and it turned out pretty crumbly) so last night I tried it again. I used a recipe called "Brownie Biscotti" and it turned out really well! I just changed some very little things, like, the recipe called for pecan pieces, but I thought almond bits would be better, so I did that. Then after they were done, I thought that there was something it needed, then I figured it out! Glaze! And since I've been in a real chocolate/raspberry mood recently, I made some raspberry glaze (I even made it purple) and drizzled it on and they turned out beautifully! ...At least I think so. Maybe I'm just the prideful baker here or something, though :) Anyway, then I took pictures of it and THEN let people have some :P

Blueberry Pie Recipe
This is a blueberry pie recipe that I got from (where else?) allrecipes.com, I made it for lunch at church a week or so ago and it disappeared rather quickly. I got the chance to taste a wee bit that was left in the pan (all the full size pieces were gone) but what I had was very yummy! I love fresh blueberry baked stuff!
Ingredients
- 3/4 cup white sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 4 cups fresh blueberries
- 1 recipe pastry for a 9 inch double crust pie
- 1 tablespoon butter
Directions
- Preheat oven to 425 degrees F (220 degrees C).
- Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
- Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
- Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown. Enjoy!

I made soup!
But I tested a little too much a little too soon and as a result I have no idea what it tastes like... except that there's no lack of pepper. I could tell that :\ hehehe! So I just thought I'd show you! As busy a weekend as this is, somehow I ran out of things to do this evening even though I had seemingly "so many" things to do earlier... :)

Who's celebrating her 15th birthday today! Julianne has been a wonderful pen pal and friend to me so I wanted to wish her a very happy birthday in a special way! I happen to know that she likes haiku's and so even though I'm not nearly as talented writing them as she is, why not give it a try?

Peanut Butter Frosting Recipe
After epic failing my first try at Peanut Butter Frosting the other day, I tried again only this time I was using my own recipe and brand name peanut butter (I think I'd taken Jif for granted before) so anyway, I came up with a pretty awesome recipe of my own, if I do say so myself... and I thought maybe some of you would like to have it. I hope you like it if you try it! And be sure to use brand name peanut butter!!
Ingredients
- 6 tablespoons butter, softened
- 1 cup peanut butter
- 1 cup confectioners sugar, divided
- 1 1/2 teaspoons vanilla extract
- 1 1/2 tablespoons milk
Directions
- Beat butter and peanut butter with electric mixer on medium speed until creamy. Add 1/2 cup confectioners sugar and beat again until creamy. stir. Add the other 1/2 cup confectioners sugar, vanilla extract, and milk. Beat with electric mixer on medium speed about 1 minute or until light and fluffy. Stir again then put on cake or brownies.

Photo-ography...
Earlier, Mikey came into the living room and said "Hey Chelsea, do you want to go to the skate park and take pictures of me?" I've been his photographer before so this wasn't too surprising. I agreed and we went, this was the best picture I got of him.
Sometimes I mess with the camera just for fun while he's planning the next picture, so here's a random shot.
It's my shadow... I guess that's kind of obvious though :-)
So yeah, I thought those were pretty interesting. Oh! I almost forgot about this one! Last night we went to see a movie and as we were walking we saw this sign. Someone posted a sticker over the "N" I thought it was funny.

Chocolate Chip Cheesecake Recipe!
Apparently people liked the pictures that my mom had on her blog of the chocolate chip cheesecake I made, and apparently I'm supposed to post the recipe :) I got it from my favorite recipe site, allrecipes.com
Ingredients:
- 1 cup chocolate cookie crumbs
- 3 tablespoons butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 3/4 cup white sugar
- 1/4 cup all-purpose flour
- 3 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup miniature semisweet chocolate chips
Directions:
- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine cookie crumbs and butter. Press onto bottom of 9 inch springform pan. Bake in preheated oven for 10 minutes.
- In large bowl combine cream cheese, sugar, and flour. Mix at medium speed until well blended. Stir in eggs one at a time. Blend in sour cream and vanilla. Stir in chocolate chips. Pour batter over baked crust.
- Bake in preheated oven for 55 minutes. Allow to cool completely before removing from pan. Store in refrigerator.
